Healthy Summer Dinner Ideas

2 Mins read

An important part of a healthy lifestyle is eating well-balanced meals at home, but it can be hard to cook delicious food every night. That’s why so many people go out to eat at restaurants Conwy in the summer months. The problem with restaurants, though, is that many of their meal options are fried and high in calories, making them less than ideal if you’re trying to lose weight or eat healthier.

4 Light and Easy Recipes

As nice as it would be to have our mothers making us dinner every night, we don’t live in a time that’s conducive to that lifestyle. For most of us, making dinner (especially healthy dinners) is something we do almost daily. Here are four light and easy recipes you can make for yourself—or for your loved ones at home—that won’t weigh you down after a long day.

1) Greek Salad

Why order out when you can make a delicious and filling Greek salad at home? For an easy meal, place a bowl of salad greens in front of you. Top with diced tomato, cucumber, red onion and avocado. Drizzle olive oil and lemon juice over top (or use our favourite vinaigrette). Be sure to include some feta cheese crumbles for added protein. If you’re feeling extra ambitious, roast some beets or zucchini in preparation for your salad or use canned tuna instead of avocado. Layer everything into a large serving bowl—or individual plates—and enjoy!

2) Salmon Fajitas

Restaurant-quality fajitas can be made in your own kitchen! In fact, if you’re serving a crowd, these fresh salmon fajitas are a great way to feed your friends or family without breaking a sweat. You don’t need much more than an onion, peppers and some fish—but when all of those ingredients are fresh and flavorful, they really bring out the best in each other. For those who love spicy food, we recommend adding some sliced jalapeños for an extra kick. Fresh salsas (store-bought or homemade) and any additional toppings are also highly recommended!

3) Chicken Salad Lettuce Wraps

Make it ahead of time for an easy summer lunch option that travels well. Chicken Salad Lettuce Wraps Recipe: 2/3 cup cooked chicken 2/3 cup celery, diced 2/3 cup pecans 1 tablespoon mayonnaise 1 teaspoon lemon juice Salt and pepper to taste 6 large butter lettuce leaves Method: Toss all ingredients together in a bowl. Season with salt and pepper to taste. Spoon chicken salad onto each lettuce leaf, forming wraps by folding up the bottom and rolling sides toward the centre.

4) Sushi Bowls

Sushi bowls include: rice or soba noodles tossed with veggies and fish or chicken; topped with avocado and sesame seeds; drizzled with soy sauce or chilli paste and garnished with green onions. They are perfect for summer—and they travel well too!
